Brett Camborne-Paynter, chef-proprietor, came to Carlyon Bay having recently won 2 AA rosettes for the Parkside in Buckinghamshire. With a classical training from top restaurants including The Ivy, The Waldorf and The Four Seasons where he worked alongside Jean-Christophe Novelli from Hell's Kitchen fame, Brett's clean, no-nonsense approach is complemented by his team's attention to detail.

A genuine commitment to using the very best local ingredients, respecting seasonal variations, means that the menu changes regularly but the food on your plate is always prepared and cooked with understanding, passion and care. The service is truly Cornish, warm and friendly yet attentive with the clear aim of making every visit a pleasure. Perhaps it is the combination of all the above and Brett's innovative flair that gained us 2 AA rosettes within 6 months of opening.

The simply elegant dining area is raised so that you can see the chefs at work in the open plan kitchen and enjoy their concentration whilst they create your meal. The cuisine is Modern British from the freshly baked bread through to the delightful petit-fours and is designed to create that comfortable, well fed feeling whether your appetite is small or large.
